I am going to be upgrading the RAM in my new mac mini next week, but I wanted to use it before that and install some programs now. I wanted to know if doing that will cause my recently added programs to be deleted if I open the computer and upgrade the RAM later some stuff on it.

nope prgrams are stored in your hard drive, your ram just stores temprary data that is lost each timeyou power down 
so unless ur hard drive gets fried when u upgrade nothing should be lost
