Creating your own iTunes Extras

Has anybody done this before? I'm attempting to do it right now with the Fox and the Hound, I can get a background image and background music fine. My difficulty is that the Fox and the Hound DVD doesn't include any deleted scenes or trailers and deleting every reference to them in the template given makes the features menu inaccessible for some reason.
