iPod touch Saving music and apps before a restore?

My mother's iPod Touch needs to be restored, and she has asked me to save all her apps and music before restoring it, but I'm not sure how.

The iPod only displays a USB cable pointing the iTunes logo, and when it is plugged in to a PC or Mac (We have access to both.) a notification says that the iPod needs to be restored before it is used with iTunes.
We don't really want to spend any money.

So how can we move music onto the computer from the iPod? (Most of the music and apps are only on the iPod, so a sync wouldn't fix it.)

Thanks. I've tried a few software utilities like that, but none of them are seeing the iPod.
