How to clean for resale Jailbroken iPad 2

I'm looking to erase my personal data off a jailbroken iPad but not loose the jailbrake on 5.0.1. What would be the best way of me doing somehting like this

Here' what I did-
1- Synced ipad and removed all media, email acct, contacts etc, anything you can sync with iTunes, I unsynced. (You can not use the on-ipad "Erase content" this will brick it and you have to restore to 5.1)

2- on iPad I went thru everything in Settings and tried to reset or erase my settings and acct names, including email if you set it up.

Is it safe? I don't know for sure.

I couldn't figure this out either. I manually deleted every app and went to settings and deleted all accounts. I also reset all settings which brought the ipad to reset like when you turn it on new. If it deleted all my stuff im not sure but i hope so.

i tried to update to 5.1 but it wouldn't let me
