What does restoring from backup give you?

Typically I set my phones up as new but I have data on it that I don't want to lose so I will be restoring from backup.

Specifically, will iTunes backup and restore the following:

Text Messages
Voicemails

This is going from 4S running 5.1.1 to iPhone 4 running 6. Thanks!

yes it will restore all of that, it will look just like what your 4 did just longer :D
