Sync ONLY contacts after restore?

Couldn't you just use iTunes? What I mean is, make sure when you plug in the phone it doesn't start to sync automatically... Then, just choose your contacts and have nothing else selected ready to sync over. This is after a restore, obviously...

Maybe i'm wrong, but that sounds possible..
