Connecting my iPhone 5 to my MacbookPro via Bluetooth

Once they are paired...what can I do then?

They pair..but say 'Not Connected'

So what features do I have when they are paired?

The Hotspot feature can be tethered via Bluetooth.

Yeah.

My girlfriends old Blackberry could connect via bluetooth and you could drag music, ringtones and pictures back and forward.

You can do these things with an iPhone over WiFi using iTunes.

But you can do it over WiFi so not all is lost!

Because Wifi tends to be much, much faster. Apple being Apple, they decided to turn off the slow way to force you into a better experience so people don't do things the slow way and then complain about it being slow.
