Could someone tell me what this symbol even is, just for the sake of general curiosity. My keyboards on my MBP and Wired are both in the UK format if this helps at all...

It's the 'section' symbol, see below:

Thank you very much, just for general information, adding this symbol to the end of any password makes it incredibly secure.
