Can i still jailbreak without apple signing the old firmwares?

Yes you can jailbreak. But keep in mind you won't be able to restore back to 5.1.1 if something happens.

You must have arrived at 5.1.1 via iTunes, not factory fresh or OTA
And you must have saved 5.1.1 SHSH after the iTunes update to 5.1.1
