Sorry if this has been posted before, but am I able to connect an Airport Extreme to my modem, creating a network, and then wirelessly extend said network by connecting an Airport Express to a different modem in a different location of my house?

So I won't experience slower performance if the Airport Express is also plugged into a modem? As opposed to extending the network without it being plugged in to a modem.

Well if I was to setup an Airport Express to extend my Airport Extreme's network, wouldn't the extended network be slower? Which is why I was wondering if the extended network would be faster if the Express was also plugged into a separate modem.

Devices on the Express would see a speed drop, but it wouldn't be noticeable unless your internet connection is extremely fast.
