I'm thinking about switching back to iCloud for email since Gmail has dropped support for EAS for new users/devices. I'd like to use my old @mac.com address, rather than the newer @icloud.com version because many of my contacts already have that address from back in the day ... :)

I'm wondering if it's a good idea to actually start using the .mac address, though - do you think Apple will drop support for it at some point?

Its my understanding that Apple is going to allow .mac accounts to keep working, at least, indefinitely, for now.

I still use my .mac address daily and it's still going.

You can use .mac without an issue or @icloud in place of it you have the option of both.
