The B&H AppleCare is perfectly legit. Great price (same as Apple's Student discount IIRC)
You have one year from the purchase date to get extended warranty? I can't even give up $299 or whatever it is right now due to paying for books and other school supplies : but hoping sometime in the summer i can 
Yes, you can buy AppleCare at any time during the first year, while your Mac is still under warranty.

I think I paid ~$190 with the student discount..for 3 years that comes out to about $5/month which is a pretty good deal I think. Nice that you can add it any time in the first year, though..
