So now I think to replace my factory installed SSD 256 GB with larger and faster model.

It's easier than replace internal second HDD? (without thermal sensor replacing ...)

What I need to do it?

could I buy any model of SSD SATA III?

I'm thinking to samsung MZ-7TD500..

Finally in various forum some user add second (in my case would be the third) disk in free space http://www.flickr.com/photos/camflan/533...

It's a safe solution?

That's me. It's been around 3 years since I've done this and everything is still working perfectly. It's really safe, I used OEM parts and have lots of electronic/computer experience so it was no big deal.
