I'm returning my iMac for a different BTO and i want to make sure i don't have any issues with iTunes match or anything similar with the new iMac.

I'm thinking along the lines of those messages saying this device is registered with another computer etc.

Do i need to de-authorise any association from the iMac i'm returning. What steps should i take before i return it?

Yes, I would suggest doing that.

When I got my 13" air and then exchanged it for an 11" I forgot to do that. The fix was to de-authorize all my devices and then start over. I don't use iTunes match so I don't know how that fits into things.

Oh, don't be surprised if your old system remains in your list of devices that Apple says you own for longer than you think it should. It will eventually drop off the list.
