I want to see and participate in polls on my iPhone via Safari. Currently i can't as only the full website shows polls.

But you can via enabling the Desktop (Full) Version while on this site, look at the bottom.

It's likely possible...I asked those who know more about this behind the scenes than I do, and I learned that our mobile skin is custom, and that we likely just didn’t ask them to build support for it.

It might be a cost issue. I can't promise anything, but I've passed your request along.
