I have taken photos and videos, added contacts, and downloaded apps (App store apps) etc while Jailbroken.

Well, im about to remove my jailbreak. However; how do I make another backup, so when I restore my phone as new, everything will carry over?

You can do an iCloud backup or just plug it into your iTunes library and back it up there.

hmm
when I plug it up, this is all I see. (No option to backup)

If you were using iCloud for your contacts and photos, you should get them back after you restore using the same ID. However, the photos maybe a lower resolution.

If you currently have afc2add or openssh installed, you might still be able to pull stuff off your phone with iFunbox of terminal.
