How do you go from unencrypted data to encrypted data on the internal and backup drives?

Do the externals have to be reformatted?

No they do not have to be reformatted. It will just convert the drive to an encrypted core storage volume. For the main internal drive just turn on Filevault encryption in the Security and Privacy pane of System prefs. For an external just right click then select encrypt.
