What are the steps again for keeping my Verizon Unlimited using a dumb phone?

So I ordered my 5s last year and used the trick of using a dumb phone on the plan to upgrade to the 5S and then switching phone numbers to my personal line, keeping the Unlimited, and then dropping the data plan from my now dumb phone again.

I have to order the iPhone 6 due to unfortunate circumstances, and was wondering what the steps were again for when the phone actually arrives.

Do I turn on the phone first and activate it? Do I keep the SIM in the phone? When do I call Verizon?
