I know that one Airport has a device rating of 50 clients, but I was wondering if adding additional airports as extenders allows for more combined clients on a single network.

NO THEY DO NOT

each airport will take up 1 client slot

if you want to increase the # of clients you must give each airport its own network name. each airport needs to be on "create a new wifi network"
and of course this will cause Double Nat triple nat and quadruple nat but this is the only way to increase the limit
