Can I use the OS X install DVD that came with my 2011 Mac Mini to do a clean install on my 2008 Macbook? (I would NOT think that OS X DVDs are specifically designed for a Mac Mini)

If it's a gray install disk then no, it will refuse to install on the Macbook.
If you still have the mini you could boot the Macbook into Target Disk Mode and install using it, although you would need a FireWire 800 cable to do this. Or you could simply purchase a retail OS X install disk.
