Did anyone else's carrier settings update for Verizon? My iPhone 5 is now on 19.0 when I previously had 18.1. I can't seem to find any info on Google. Looks like the 6 might've gotten 19.1?

I haven't gotten anything yet and I'm on a 6.

Looks like iOS 8.3 simply came with carrier version 19.0 for Verizon.

My Verizon iPad actually got 19.1 with 8.3 release. My Verizon iPhone 5 has had 19 well before 8.3 came out, but I'm surprised there is a 19.1 for iPad but not for the phone yet.

As the network changes the software will too and varying hardware will use varying versions. You'll find regional updates even on the same network too after we have a new version iOS for a while.

I've never been able to find what the updates include.

Looks like there has been a recent carrier update for Verizon iPhones going from 19.0 to 19.1.

It's too bad that usually it's pretty much impossible to know what changed in these updates.
