Iphone 2.0 upgraded fine but now lags and crashes!

I was having very similar problems and I think I know what was causing it. I'm guessing you're also seeing these delays when you go to contacts or perform any action on the phone that would access the contacts file. In my case, it was due to having nearly 5,000 contacts on the phone. When I turned on MobileMe syncing, it synced all the contacts instead of just the groups I wanted. It took some time, but I eventually found the right settings to fix this. Here's a complete post outlining what I did:
