to Jailbreak the newer iTouch 32GB 3rd gen? The new ones come with 3.11 or 3.12... I hear that downgrading is a better way to JB than using ...' blakcra1n' or something? Anyone?

Last time I checked, you couldn't downgrade a 3rd gen Touch. So, no, downgrading it first wouldn't make it easier, because it's not an option. You probably heard stuff that relates to earlier iphones/touches.
