Recording Levels Differ

When I copy a CD to iTunes unto my ipod or iphone, the songs burn in different volume levels. I know there is sound check... but it compromises the music quality at playback. How can I configure iTunes preferences to record in the same loud levels? Also, which is the best settings: AAC, Apple Lossless, or Custom 256 kbps, without placing a lot of concern for space? I just want the best sound recording quality possible for my CD import settings. Thank you very much!!!
