Does anyone know of a way to create a folder system on iPad 3 in which to store incoming emails--either "inside" Mail, or in a separate app in which to paste the emails...?

You can create multiple mailboxes and either move mail to it manually or set up rules on the mail server to put the incoming mail into the desired mailbox. I'm on a number of mailing lists and have the mail for them go into their own mailbox.
Bring up the mailbox view and tap Edit at the top. At the bottom there OSA New Mailbox button. Tap it to create a new mailbox.
