If the CPU speed between the $1799 and $1999 iMacs isn't a big deal to you, any thoughts on the differences between the GTX 660M and GTX 675M for non-gaming purposes? Basically, the main goal being smooth UI animations.

Even the integrated Intel GPU is enough to provide smooth UI animations. If you are not concerned with gaming performance at all, there is not much reason to get the 675M. Of course, the higher-tier machine also comes with a faster CPU... and the GPU difference might have also some impact on GPGPU optimised applications (e.g. professional video/image suites).
A slight correction. The iMac has the 675MX not the 675M, with the MX being more powerful than it's M counterpart.
AFAIK the MX denotes that this is not a mobile but rather an under-clocked Desktop chip.
