A lack of RAM is going to show up in Safari checkerboarding, or a slight delay launching an app if it has to quit the frozen state of another app. RAM doesn't just affect apps, it also affects system performance. That being said, while I've noticed some lag when doing a bunch of stuff, and the overclocked chip in the Mini will reduce some of that, it's never been enpough to get me to upgrade.
