iPod backup question, saving app/video data

I'm getting ready for iOS 6, I noticed it said all data will be lost.

So I see youtube videos that do the Control+A, Drag over to a HD and it's backed up.

Does that save the data inside the apps and the iTuneU podcasts/training videos?

Is there a better (non-cloud) way to save all the video/iTunesU/Apps with settings?

I thought iTunes would have some kind of import/export function.

Using the official update method will not delete any data

Ok, so right click and backup. Is there any way to see/confirm what is backed up before I do my upgrade?
