First of all, this is the Mac Pro (workstation tower) forum. You'd get a lot more answers in the MacBook Pro forum.

But anyway, yes, you can use a SATA-III SSD in a 2010 MBP. It will just downgrade to SATA-II (3Gbps) speeds.

The Samsung 830 256GB is a very good drive for the money (often under $200 on Newegg) and the installation is pretty easy. Also check out the Intel 520 series and OWC/Macsale's offerings. All good choices.

Installation of the SSD is pretty easy, just unscrew 10 screws on the bottom, then 2 inside. Then you need a small Torqx to detach the 4 bolts.
The Samsung 830 is a pretty drive, which works fine in multiple Macs from friends.
