I download quite a bit of album art to go along with cd's I have ripped to itunes. It generally seems to be the case that downloadable album art comes sans color profile, thus I have to assign a profile. I was wondering if I should assign the artwork the custom calibrated profile I made for my monitor or something else like the ever popular srgb IEC61966-2.1?

You definitely don't want to assign the colour profile of your monitor. That should only be used to control how the monitor displays colour. Otherwise, how will that image look on any other screen?

Yes, sRGB is as good as any other, if you want to assign profiles. It may or may not make any difference.
