A summary of my thoughts
This was a decent update, though the full impact of some of the changes have yet to be realized (ex. 64-bit). Touch ID is interesting but it could be a gimmick to many. The camera is a great upgrade and of course, there's CPU and GPU improvements.
There's obviously a lot of changes that weren't implemented, such as higher default storage options (32-64-128GB), haptic touchscreen (interestingly enough, this was rumored for the 5 but not the 5S), NFC, 802.11ac, more megapixels on the iSight camera (of course, megapixels aren't everything), Lightning to USB 3.0, and so on
Anyways, I'm going to hold off on this update and keep my iPhone 5 I'll wait for the 6.
