This is driving me nuts, where in the heck are my photos and videos taken by my phone when backed up on my computer?

I am looking for the folder that itunes would move my photo / video data to so I can start editing, opening in PS, iMovie, etc and I cant find the darn things...

When backed up using iTunes they are saved in an odd format that is nothing more then a bunch of meaningless files. To edit them and what not, you need to import them. With the iPhone plugged in open iPhoto. It'll see your iPhone as a camera and ask you if you want to import the camera roll contents. Once imported you can do things with them through iPhoto.
