iPod touch is it possible to transfer save data to another ipod?

I'll buy new one. and I want to transfer save data of each app.

Once I accidentally deleted an app from ipod and synced the app again but save data was gone.

Does the backup have to be running the same OS as the new iPod? My iPod is running 4.0, and I want to transfer the save data from this to the new iPod coming out tomorrow. We could possibly see a 4.1 update for the iPod/iPhone, so if the new iPod comes with this then does my backup file have to come from a 4.1 device, or will it work from 4.0?
