512 Mb Video card in a G5

Install a flashed 7600GS with 256MB RAM, this is one of the most advanced AGP 8x cards (and the most affordable, better are only 7800 and 7950).
If you have PCIe though, even later nVidia card should work, maybe even the GT120s, but most probably the 8800GT 512MB.

The 2.7GHz DP doesn't have PCIe though, it has PCI-ports (2xPCI-X 100MHz 64Bit and 1x PCI-X 133MHz 64Bit, to be exactly).

Nope. None of above (7600, GT120 and 8800GT) will work in G5. There's no PPC ROMs for listed cards.
At this moment there's no confirmed working flash of 512MB AGP card with all memory recognized. Unfortunately all of ROM geniuses able to make this possible are retired
Most powerful what you can have in this G5 is 7800GS (or Gainward's GT one) or Mac ATI X800XT/flashed FireGL X3, but all with 256MB RAM. No 512MB card for AGP G5.
