Anyone know of a headrest mount or other way to allow kids in the backseat to see an ipad that works with an iPad in an Apple case. I saw that there were threads and info on a lot of products, but none look compatible with an iPad in an Apple case.

The Problem With Cases

I'd be careful with mounts that support a variety of sizes / cases. This usually means that the mounting system is adjustable and therefore easily compromised, especially over time. The company I work for (full disclosure) makes one called CoulVue for iPad and iPad 2. They are both customized to be a perfect fit for the iPad and iPad 2, which maximizes the security and stability of the mount.
