Provided is a link to where you can download a shareware MPEG-4 AAC encoding script. You will need iTunes 3 and Quicktime 6 Pro for the script. Also, the script is shareware and is listed for a $5.00 fee.

The script also works for Jaguar (OS X 10.2) and comes with a version for owners of 10.1.x.
 
Encoding

If you are importing them into iTunes and then encoding to MP4/AAC you need to set iTunes to rip into AIFF. If you have iTunes rip to MP3, and then let QT encode that into MP4 you are losing quality.
