I was wondering if its possible to save all the messages on my computer and be able to access them... Would that be doable?

Jailbreak, then use a program called ifunbox to grab the file sms.db out of var/mobile/library/sms/

If you don't want to jailbreak, PhoneView will do this too. You can export them as a PDF from PhoneView too.
