I have 2008 MBP and am thinking about getting 2011 MBP.

The current one has SDD in it (with OS X and Win7 via Bootcamp), and I was wondering if I could simply swap it into the new laptop?

I am guessing I will have to install new drivers and all, but will there be any problem? I want to save the trouble of backing up everything then format, re-install applications, boot camp then restore the data.

The OSx portion may or may not have problems; there are some hardware differences. The bootcamp partition may need re-authorization since it's a different machine and Microsoft's hardware checking will complain.
There are some other threads on the forum about transplanting.
