How can i "undo" the latest update?

I want to go back to 10.6.7 (10.6.8 now) on my 13" 2011 MBP. It's not backed up using time machine. I do have Win7 on Parallels and MS Office for Mac
and I know I can do a restore from the CD's but will I loose these programs?

Your best choice is to Archive and Install, which will keep all your files and apps. From there, download and install the Mac OS X 10.6.7 Combo Update from Apple's website.

I will check into that, new to Macs and this is the first time I needed to do something out of the ordinary.

Besides the obvious (it doesn't touch your apps & files) what I really like about this choice is it's speed & reliability. Including the 10.6.7 Combo Update, you'll have the job completed in a very short period of time.

To do the archive and install do I use the OSX disk that I got with my system and I'm guessing it will prompt me for this choice?

Thanks, like I said, I'm totally new to Macs so this may seem like a "stupid" question.

Snow Leopard will Archive and Install by default, so you won't have to chose anything.

For one if you have a Mac Pro and are trying to use displayport on an ATI 5770 card. 10.6.8 seems to have broken that.

Well my issue has been resolved, after the 10.6.8 update my MBP went from 115 deg f that it normally runs to 185 deg f with nothing running and the fans running 5000 rpm's. I noticed my dock was using 100 percent CPU and spotted a thread below mine with the same issues. Seems parallels and 10.6.8 didn't get along very well. Someone posted a "fix" in post 7 of that thread and now I'm a happy camper again.
