While this information is exact for Vista, I believe the folder structure for Windows 7 is similar.
C:\username\AppData\Roaming\Apple Computer\MobileSync\Backup where username is the name you have given your login for the computer.
That will contain a number of other folders. Each containing a backup.

I had the same question a while ago.
Also, the AppData folder may be hidden so you may (like I did) have to create a shortcut on your desktop and make the location "%AppData%", without the quotation marks of course.
