Reassigning User Folders

One of my Applications, by default, stores image files on the same drive as the application - no easy way to get around it so far.

A forum member suggested that I reassign the location for my user folders to one of the other drives in my Mac Pro running 10.7.2.

Is this doable and, if so, how do you do it?
