What's the difference? I am looking to get one or the other.

I think Pro model have magnet and Ruber grip. Also, color selection is a bit different with Pro.

If I go Adonit, I'd buy Mini model as I think the tip size is smaller and makes it easier for precise drawing/writing.

I currently own DAGi stylus which is very similar to Adonit. Was always interested to see some comparison between them with pros and cons of each.

Really? The mini writes smaller? I am only looking at the Jot b/c it seems to be the best for note taking with the metal tip.

They all write the same size; ink size is a function of the app, not the pen. Smaller tips can make it easier to see where the contact point is.

That's actually the main selling point of the Jot over other stylii, feel aside; you can see exactly where the tip touches, as opposed to estimating the bottom of the curve of a bulbous tip.
