I just installed a SSD HD into my Macbook Pro main HD bay and moved the factory HDD with the OWC Data Doubler.
I booted from the factory HDD and then used Carbon Copy Cloner to clone the factory HD over to the SSD. The process was successful and I was able to boot from the SSD, but now all of my settings(iCal, mail, bookmarks, lightroom, factory settings, etc.) are gone.
Is this normal after upgrading/changing HDs?
If not, what can I do to recover the settings that did not transfer over?

No that is not normal. I used CCC to change out hard drives in my MBP and everything transferred correctly to the letter. Try it again - making sure that all the boxes are checked and let us know.
