I was very interested in some threads that were asking about using a bluetooth phone as a modem, and how you were billed for that, specifically, if it would be free on nights and weekends, if calls during those times are free on your plan. There was at least one thread on this subject, but it seems to have died before revealing any useful information.

Verizon bills usage on some accounts as regular minutes. As in, if you are on for 25 minutes then its 25 minutes of anytime minutes. If you are on during n&w its free.

I *believe* that Verizon doesn't track data, so it will go against your minutes.. but they don't allow it on their phones.. but there is a work-around that I've read about. Cingular counts it by data, so unless you buy the $80/mo unlimited data plan they are going to punch you in the mouth with a 6 trillion dollar bill. I'm not sure about the rest of the carriers.
