I'm thinking of selling my 2011 13" Macbook Pro and upgrading to a new 15" (non-retina) 2012 Macbook Pro. I've upgraded the older 13" hard drive to an solid state drive. I would like to take that SSD (SL OS 10.6.8) and install it into the new 15" Macbook Pro. Assuming I might need a few new drivers, would the 2012 Macbook Pro function and work with the older OS on the SSD? Or is there new firmware on these 2012 (non-retina) that would cause the snow leopard/bootcamp with Win XP SP3 to not run at all or not run properly?

Snow Leopard does not have the drivers for 2012 Macs, you need at least Mac OS X 10.7 or buy 10.8 and install it before putting the SSD into the 2012 Mac.
