10.8 clients with 10.6.8 server?
Does anybody know whether client Macs running Mountain Lion are able to interact with, and be managed by, a server running Snow Leopard server?

It depends on what you mean by "interact with"...DNS, DHCP etc will work.
But managed? No, I don't think so since the MCX/package changed. MLS now supports DHCP again (as of 10.8.2)

10.6 server with 10.8 clients works
Yes, I can assure you it works I have done this at the school I work at. MCX works, I have run into no problems with compatibility at all.

I have a Mountain Lion client (upgraded from Lion) which is bound to a Snow Leopard Server machine for its Mobile Home Folder. It works as well as it ever did. :-)
