Boot From USB Recovery Disk

I just received my 2012 Mac Mini and I swapped out the 500GB HDD for a 256GB SSD. Before I did this, I made a bootable USB Recovery Disk with OS X Recovery Disk Assistant. According to this article, you need to hold the Option Key to be able to select to boot from it. The problem is that holding Option doesn't do anything. It's almost as if the keyboard is not registering on startup because it asks me to pair it on the next screen. Any ideas on how to boot from this USB drive?

You don't need that USB key utility. That is for pre-2010 machines that do not have Internet Recovery build into the system EFI (firmware).

Take out the USB key and hold command-r when booting and that will ask you which wifi network to join, then it will take you to recovery.

If you are asked to pair the KB, go ahead and do so... then it should take you to recovery.
