Why have my apple TV's got numbers after their names?
My bedroom apple tv is up to 193 and my sitting room is up to 4

Yeah
Living room = Living room TV Bedroom = Bedroom TV But then they have numbers when I look at the name on ariplay, those numbers increase everytime I look. its like they're adding themselves onto the network, but theres still a trace of them previously on there so they stick a number on the end.

Restore it to latest OS. Sounds to me like software issue.

Sounds like your router is reissuing an ip to them and not removing the old ip from the dhcp list

i believe you just have atv3's correct? and are they hardwired? ive had the same issue when i allowed my atv3 to sleep. I removed sleeping and not only does it not keep adding numbers to its name but it instantly connects to homesharing now via wireless.

adding a DHCP reservation in your router should clear this up also.
