Handbrake format setting

I am confused on some of the handbrake devise settings. I watch mostly on my Mac Air or Ipad (2012). I don't care so much about superquality so long as watchable. I can't tell the difference between Universal, iPad, or the 3 Apple TV settings although the large file format gets checked when I select ipad or apple tv. Can someone help with this. I don't want to take up too much room per disc.
