3rd party replacement for itunes

I've tried a few different software options but none seem to do what I want which is pretty simple - that or I'm not using them right.

I want to be able to create a couple different folders on the ipod, then drag mp3's into whichever one. The have a folder play, like a playlist.

Why can't you just make a playlist in iTunes? Which iPod do you have?

You can create folders in itunes.
